Tuna Steaks with Red Onion

Ingredients

2 x 170g (6oz) tuna steaks, fresh or defrosted
4 x 15ml spoon (4 tablespoons) oil
2 medium red onions, sliced into rings
2 x 15ml spoon (2 tablespoons) brown sugar
2 x 15ml spoon (2 tablespoons) red wine vinegar
150ml (5 fl oz) red wine

Serves 2

Method

Heat 2 x 15ml spoon (2 tablespoons) of the oil in a saucepan.  Add the onion and sprinkle over the sugar.  Stir well.

Add the vinegar and wine.  Bring to the boil; simmer gently until all the liquid is absorbed.

Meanwhile, heat the remaining oil in a griddle pan or frying pan.  Cook the tuna steaks for 4-5 minutes on each side.

Serve the tuna topped with the onion, accompanied by creamy mash and mange tout.
